Tenderstretch? What is it?
 
Tenderstretch is an alternative means of hanging the carcase during chilling. While carcases are traditionally hung by the heel (Achilles tendon), tenderstretch carcases are suspended by the pelvis. When a carcase is tenderstretched, the carcase is suspended by the pelvis so that the leg drops down at a 90 degrees angle. As a result, a number of muscles are held in a stretched position so they cannot contract during rigor mortis. Tenderstretch is most effective in the hindquarter and has a varying effect on each cut. It is strongly positive in most hindquarter cuts (other than eye fillet which stays the same) and largely neutral in forequarter cuts other than the rib fillet. In addition to altering the MSA score positively, tenderstretch also affects the degree and rate of aging.

AJ's Outback Butchery Terms & Conditions
 
Details
1. Andrea & Justin Beard own and operate AJ’s Outback Butchery at the address set forth above, and provide slaughtering and butchering services, which will be performed at client’s/property owner’s place.
2. AJ’s Outback Butchery agrees to perform these services for client under the terms and conditions set forth in this contract.
 
In consideration of the mutual promises set forth in this contract, it is agreed by and between client and contractor:
 
Section One
Description of Work
1. The work to be performed by the contractor includes all services generally performed by a slaughter man and a butcher, including but not limited to the following:
a. Slaughtering – the killing of cattle, sheep or pigs for food.
This may or may not include the use of guns, which if so will be used properly and safely with the property owner’s permission.
Butchering –the processing of the meat killed for food consumption, which includes but not limited to: mince, sausages, steak, roasts, corn meat and any other meat product.
OR
b. Butchering –the processing of the meat killed for food consumption, which includes but not limited to: mince, sausages, steak, roasts, corn meat and any other meat product.
 
Section Two
Payment
The Client will pay AJ’s Outback Butchery the total amount owing on the day the meat is processed into the appropriate cuts. 
Payment will be paid according to (prices are exclusive of GST):
Price Change: AJ’s Outback Butchery will charge
$1.90kg + $120 Travel For 2 nights hang
$1.80kg + $120 For 2 Beasts or more done
$1.60kg + $120 Travel For Overnight hang
$1.60kg + $120 Travel For kill & cut up in own coldroom
$1.60kg + $60 Travel For Cut up only own coldroom

Sheep$50per sheep
 
The total amount including amount per kilogram and travel must be paid before AJ’s Outback Butchery leaves on the final day, unless special conditions have been arranged prior.
 
Special Conditions – if arranged and the client has received permission to pay after the last day of butchering, the amount owing must be pay within 7 working days with no exceptions.
 
Section Three
Confidential Information
Each party shall not disclose to any non-party to the agreement, any confidential information of such to other parties. Confidential information is information which relates to trade secretes or business affairs, but does not include information which is generally known or easily ascertainable by non parties of ordinary skill in computer systems design and programming.
AJ’s Outback Butchery hereby acknowledges that during the performance of this contract, that AJ’s Outback Butchery may learn or receive confidential client information and therefore hereby confirms that all such information relating to the client’s business will be kept confidential but the business, except to the extent that such information is used within AJ’s Outback Butchery to do clerical duties.
 
Section Four
Disputes
Any disputes that arise between parties with respect to the performance of this contract shall be discussed and a solution or compromise determined. If the contract is suspended for whatever reason there is a minimum fee to cover costs, which includes travel plus a fee, which is a minimum of $250.
 
Section 5
Liability
The work to be performed under this contract will be performed entirely at contractor’s risk, and contract assumes all responsibilities for the condition of tools and equipment used in the performance of this contract. AJ’s Outback Butchery will carry, for the duration of this contract, public liability insurance in an amount acceptable to the client. 
 
Section 6
Quality Assurance
AJ’s Outback Butchery is committed to providing a quality service that meets the needs of customers. Our quality system will be maintained by following AJ’s Outback Butchery Policies and Procedures manual, where Occupational Health and Safety procedures are in place in accordance with the Meat Act 1993 to maintain a safe and hygienic environment.
AJ’s Outback Butchery aims to improve and ensure the integrity of relevant standards, which include standards relating to meat and livestock. This will be achieved by providing all customers with quality service in all areas, meat products will be explained and detailed in simple everyday language, a template of butchery services will be available and methods will be used to maximize the safety and integrity of food. 
 
Section 7
Owner’s Responsibilities
Once AJ’s Outback Butchery leaves the client’s property the cold room is the responsibility of the client. Any unforeseen circumstances that may occur to the cold room or the meat within the cold room which isn’t a direct result from a fault in the cold room, which must be provable, then AJ’s Outback Butchery forfeits the responsibility. 
The period the cold room resides at the client’s residency, it is the client’s responsibility to check the temperature gauge and the product inside the cold room for any inconsistency. If any problems or worries occur the client should contact AJ’s Outback Butchery straight away to ensure product is satisfactory. 
Due to the process and nature of the butchering service AJ’s Outback Butchery is not liable for unforeseen incidents that can happen to the meat product during that period. For this reason we shall not be accountable for variations including, but not limited to, interrupts in electricity, storms, and the beast having an illness or other infection that could influence the meat. Every attempt to ensure the integrity of your meat by following strict hygiene and safety procedures are being carried out. AJ’s Outback Butchery does not foresee any complications but must point out the client’s role in this procedure.
If in event of any dispute please refer to that section.
 
Section 8
Maintenance
AJ’s Outback Butchery do annual refrigeration checks to the cold room from a registered and professional refrigeration specialist to ensure temperature and cold room reliability. The equipment is all of sound performance and only safe butchery equipment is used. 
Clients are not permitted under any circumstances to use any of the equipment, due to lack of skills and qualifications. 
 
Section 9
Qualifications
AJ’s Outback Butchery, operator Justin Beard is a fully qualified butcher and slaughter man with at least 5 years experience.
