AJ’s Pastry Sausages
Puff Pastry
Sausages
Milk
BBQ or tomato sauce
Defrost Puff Pastry. When soft lay sausage on pastry, add a line of tomato or bbq sauce over sausage and roll up. Usually get 2-3 sausages per 1 sheet of pastry, cut to size. May need to brush milk on ends of pastry to help stick. Put on baking tray, brush with milk and put in moderate oven until pastry is golden. Enjoy!
AJ’s Beef Casserole
Ingredients (serves 4)
2 tablespoons olive oil
1.5kg diced beef chuck or blade steak
2 large onions, cut into thin wedges
4 Large potatoes
2 garlic cloves, crushed
4 sticks celery, trimmed, sliced
2 large carrots, peeled, cut into 3cm pieces
2 x 425g cans diced tomatoes
1 cup beef stock
2 tablespoons parsley
2 tablespoons basil
Method
1. Add oil steak and vegies to pan. Cook, stirring often, for 5 minutes or brown.
2. Add tomatoes, stock, herbs and garlic. Bring to the boil. Reduce heat to low and simmer, covered, for 1 hour. Uncover and simmer gently, stirring occasionally, for 30 minutes or until beef is tender and potatoes are soft.
3. Divide half the casserole between 4 plates. Serve with mashed potato or bread. Leftovers Allow reserved casserole to cool. Keep in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
Variations:
Can use any vegies: like peas and corn
AJ’s Sausage Rolls
500g mince
1 onion chopped
2 teaspoons crushed garlic
2 tablespoons parsley
1 tablespoon lemon juice
1 egg
1/2 cup Breadcrumbs
(optional helps keep mixture together)
Puff pastry
Milk
1. Add all ingredients in a bowl and mix together.
2. Lay puff pastry out slice in half adding a row of mixture in the middle of pastry.
3. Brush milk either side of mix and fold pastry together making a sausage roll. If you use too much mix the pastry will not meet.
4. Place on tray, brush with milk. Place in moderate oven until golden, approx 1 hour.
Variation:
Add peas, corn, capsicum or other copped vegies. Yum!
